Do you know what sounds good for dinner tonight? Quick and easy meal ideas with recipes that are even easier!

One of the easiest ways to accomplish this is planning ahead and using your crock pot.

The best time to use this recipe is on the days you know you’ll be busiest during the week. But, keep in mind that means you need to cook your food the day before!

So if Wednesday is your busiest day of the week with church groups and kids sports, you should have your crock pot going on Tuesday or over night Tuesday to Wednesday morning. That way your meals for the day are grab-and-go in the morning.

By having your protein cooked in advance, it’ll be quick to throw it together with the suggestions below to make a complete meal.

This will save you time, money and stress!

Meal Ideas using the Salsa Chicken:

Chicken & Rice: How easy is that?! Combine ¼ – ½ cup of rice (I prefer jasmine rice) and salsa chicken. Add a salad on the side if you want, and you have a complete yummy meal!

Salads: Make any type of salad that you would like and top off with chicken! Try throwing some olives and tortilla strips in the salad to keep with a more “southwestern” theme.

Wraps: I prefer the Ole` brand “Xtreme Wellness” wraps. They’re high fiber and low carb wraps. Add chicken and whatever veggies you want!

Crock Pot Salsa Chicken

You will need:

-2 lbs of boneless, skinless chicken breast
-1 jar (16oz) of ANY salsa you want
-1 packet of taco seasoning
-Crockpot

Directions:

Mix together seasoning packet and salsa together in small bowl. Place chicken breast in crockpot and pour salsa mixture on top. Turn crockpot on LOW and cook for 8 hours OR HIGH for 4 hours. Once done cooking shred chicken in crockpot with 2 forks.

Serving size: (1/2 cup) Fat: 3 Carbs:5 Protein: 22

Since this is such a high protein meal with very low fat and sugar, feel free to eat multiple servings throughout the day. Even 5 servings would ONLY be 25 grams of carbs!
